Pumpkin soup and other things

Today we cooked one of our pumpkins and made a delicious pumpkin curry soup. If I were doing a Thanksgiving meal in America, I would start it with this soup! I don't think any of our Russian friends would like it, though. Jaan helped me with every step of making it, and then ate two bowls full.

Now Jaan and Will are at the orphanage. Raia and I stayed home tonight. It's been a long time since I've had such a nice chunk of time one-on-one with her. We played like crazy, and now she's in bed.

I'm really enjoying watching Jaan develop an understanding and compassion for the kids he's with tonight. Last week as we walked home in the cold, he had all kinds of questions about the children having enough blankets and warm socks. Then, he and Raia and I sat together at our kitchen table enjoying a special treat of hot chocolate before bed, and he asked the big question, "Do they have mamas?"

We enjoyed a beautiful fall day today. The weather has warmed back up again, and it was finally clear! We planted our tulip bulbs. As Jaan understands it, they're going to sleep all winter, so he wanted to cover them with a blanket.

I was thinking you should explain to Jaan that the soil is the blanket for the tulip bulbs. Then I realized Jaan and Raia love nature so much, they might both request their own soil blanket!

Pumpkin/curry soup sounds fantastic - I'd love the recipe if you have it electronically.

Finally have a chance to visit your blog!!! I love to hear how Jaan is growing this sweet heart of compassion! That's the Lord in him, Phyllis!!! Our oldest son told me, when he was about 3, that when he grew up he was going to find some children who did not have a mom or a dad and he was going to become their dad! He has, ever since, had a real heart towards orphans. I do believe God will use this someday in his life! It will be fun to see how God uses Jaan's heart and his experiences, as well. Anyway, I'm off to catch up on your blog but just wanted to comment real quick! Blessings,

Debi, videos have to be a rare treat. They take forever to send. (And I don't have very many of them!)

The soup recipe is
4 Macintosh Apples, peeled, cored, chopped
1 tbsp butter
1 spanish onion, finely chopped
1 huge clove of elephant garlic
2 tbsp curry powder
2 tsp ground cumin
4 cups fresh pumpkin
1 handful of baby carrots
3/4 cup chicken broth
1/2 cup brown sugar
4 potatoes, peeled, diced
salt and pepper to taste

-Melt butter in large saucepan over medium heat
-Add onion, garlic, cumin; saute, stirring often until onion is soft and fragrant
-Stir in apples, pumpkin, broth, sugar, potatoes, carrots
-Bring to a boil, stirring often
-Cover, reduce heat to low
-Simmer 25 minutes, stirring occasionally
-Puree soup in a food processor or a blender
-Return soup to saucepan
-Reheat, covered, over low heat

The changes I made are: I cut the sugar, and I'd probably leave it out completely next time. I didn't peel anything except the carrots. I used regular apples, onions, garlic and carrots. It needed a whoe lot more liquid than the recipe said.

So Debi thinks Raia's picture is worthy of future blackmail. I could be very rich if that is the case. I have some pictures of Phyllis and Leetra with much more food damage to their faces. Phyllis looks like a racoon in one of her spaghetti-on-the-face pictures.

Perhaps, when I have some time, I'll put them up on my blog. Any offers of money to stop this threat? Nyah, ah, ah. ( - ;

I left off the last sentence of the recipe. It says to serve with sour cream or plain yogurt on top. :-)

You think that photo is bad? Look at the one I got today! Leftovers must taste even better. That spot on her forehead is from when she was licking out her bowl. Dad, feel free to post pictures from when I was little. :-)

Thanks for the recipe. In a strange coincidence, I stopped by a little Thai place yesterday where they have a "daily special" and that's about it. Yesterday's offering was, you guessed it, Pumpkin Curry Chicken. =)
